Cheese & Bacon Scroodles

Your new favourite lunchbox fillers will be these fluffy, melt-in-your-mouth cheese and bacon savoury muffins. They’re so easy to make - simply mix all ingredients, cook, and serve in under thirty minutes!

Ingredients
  • 250g EasiYo Greek Style Natural Yogurt
  • 100g Streaky bacon, chopped
  • 100g cheddar cheese, grated
  • 2 Tbsp Bacon and onion soup mix
  • 80g Self-raising flour
  • 2 Tbsp chives, chopped
  • Extra grated cheese for topping
  • Extra bacon for topping

    Method

    1. Preheat oven to 180°C.
    2. Line 20 small muffin tins with squares of baking paper.
    3. Put all the ingredients into a bowl and using a fork, mix together gently until just combined.
    4. Spoon into small muffin tins. Place a small piece of bacon on top, and top with a little extra grated cheese. 
    5. Bake 15 minutes until puffy and golden.
    6. Serve hot or cold
