Cheese & Bacon Scroodles
Your new favourite lunchbox fillers will be these fluffy, melt-in-your-mouth cheese and bacon savoury muffins. They’re so easy to make - simply mix all ingredients, cook, and serve in under thirty minutes!
Ingredients
- 250g EasiYo Greek Style Natural Yogurt
- 100g Streaky bacon, chopped
- 100g cheddar cheese, grated
- 2 Tbsp Bacon and onion soup mix
- 80g Self-raising flour
- 2 Tbsp chives, chopped
- Extra grated cheese for topping
- Extra bacon for topping
Method
- Preheat oven to 180°C.
- Line 20 small muffin tins with squares of baking paper.
- Put all the ingredients into a bowl and using a fork, mix together gently until just combined.
- Spoon into small muffin tins. Place a small piece of bacon on top, and top with a little extra grated cheese.
- Bake 15 minutes until puffy and golden.
- Serve hot or cold
